Ice wine (German: Eiswein) is a type of dessert wine originating from Germany, with major production areas in Canada, Germany, Austria, and other regions. It is made from grapes that have been left to freeze on the vine over winter, hence the name.
There is evidence to suggest that the practice of making wine from frozen grapes dates back to ancient Roman times. However, the generally accepted first ice wine in history was produced in Franconia, Germany in 1794.
This year, due to colder weather, the yield of frozen grapes is quite significant, making it seem like a very good year for ice wine production.
